Indus Flavour: Culinary Consultant for Indus Flavour, Delhi NCR, Chef Ashwani Kumar Singh curated a unique vegetarian menu inspired by the culinary traditions of the Indus belt. Featuring bold spices, slow-cooked delicacies, and authentic north-western flavors, the concept beautifully blends heritage, authenticity, and innovation on every plate.
The Forgotten Feast: More recently, he curated and led a Rajasthani Food Festival at The Westin Mindspace, Hyderabad, followed by “The Forgotten Feast” at JW Marriott, Pune, reaffirming his commitment to reviving heritage cuisines while presenting them with contemporary finesse.
In collaboration with APEDA, he embarked on a meaningful culinary journey focused on health, sustainability, and organic produce, conducting a three-day live cooking demonstration in Noida that showcased the richness of ingredients grown by rural farmers.
